What is known in France as “la fabrication artisanale” is the artisan’s craft of using hand techniques, slow natural fermentation, closely watched methods and personal judgment - taking into account environmental factors on climate & temperature. Each batch is treated with care. Modifications are made depending on the activity of the starters and the flours used - to produce a crusty loaf with an interesting flavourful and irregular texture and nice crumb. Our breads are honest, rich in flavour, and full of wholesome nutrients.

Artisan Breads.

Our breads are artisan breads. They are made the way bread was made before industrialization began, dictating ever shorter production times. Our breads are shaped by hand and baked in a wood fired masonry oven and are peasant breads in the best sense of the word. We carefully select our ingredients. We use as much wholesome grains and flours as possible. The bulk of our flour we mill on our stone mill right before baking to preserve the nutritional germs. Most of our ingredients are certified organic and we prepare most of our doughs by natural leavening. We do not use additives or preservatives - in this traditional way of baking it is not necessary.

As life itself, the baking of wholesome bread takes time and must not be rushed. It is as much a process of reflection as it is a process of manual labour. Baking is also a very personal process as bread is offered from baker to fellow, from hand to hand, as a product made with care and consideration, as nourishment as well as joy.

Carbon Neutral.

Although we use wood as fuel, the Red Rooster Artisan Bakery is operating carbon neutral, using only dead, beetle-killed wood off of our own property and purchase carbon offset credits for the electricity we use and for our (sole) vehicle, the delivery van - without it there would be no bread.
